Ras El Hanout Roasted Vegetables Recipe
An aromatic blend of roasted veg originating from Africa.
Ingredients
- 1 Red onion sliced
- 1 Red pepper sliced
- 1 Green pepper sliced
- 200 g Mushroom cut into quarters
- 3 Garlic cloves crushed
- 1 tbsp Ras el hanout spice mix
- 400 g of mixed vegetables such as sweet potato or pumpkin (Anything you want, this may very the cooking time.)
- 2 tbsp Olive oil
- Salt
Instructions
- Preheat your oven to 180 degrees celcius.
- In an oven proof tray, add vegetable and drizzle over olive oil.
- Sprinkle over Ras el Hanout mix and season with salt and mix together well.
- Place in the center of the oven and cook until the veg is fully cooked. Roughly 15-30 minutes depending on the veg used and how big your chunks are.
- Serve with a delicious salad or your favourite roasted meat.
