Fruity Dhansak Recipe
A fruity curry that contains pineapple and is perfect to introduce the family to curries. Sweet and fragrant Dhansak is an excellent choice.
Ingredients
- 2 tbsp Ghee or vegetable oil
- 2 tbsp MKS Dhansak Curry Powder
- 1 large Onion diced
- 2 cloves Garlic minced
- 1 inch Ginger minced
- 3 tbsp Tomato paste
- 400 g Tin chopped tomatoes
- 500 ml Vegetable stock
- 100 g Red lentils
- 150 ml Pineapple juice Use the juice out of the canned rings
- 4 Pineapple rings
- 2 tbsp Lemon
- Fresh coriander to serve
Instructions
- Heat the ghee in a large pan over a medium heat. MKS Dhansak powder and stir until fragrant. Add the onion and saute until soft and translucent. Add the garlic and ginger and cook for 1 minute. Add the tomato paste and cook for a few minutes.
- Stir in the tinned tomatoes and vegetable stock and add the red lentils. Stir until fully combined and bring to a boil. Reduce to a low simmer and cook until the lentils are fully cooked (about 20-25 minutes). Keep stirring to prevent the lentils sticking. You may need to add more water as you cook the lentils.
- Add once the lentils are cooked reduce the sauce down until it is very thick. Add the pineapple juice and pineapple rings and stir to combine. Cook for a few minutes.
- Garnish with the lemon juice and fresh coriander and serve with your favourite rice and naan bread.
